Andes Mint Chocolate Chip Cookies

Hi there! I think I’ve just created my new favorite Christmas cookie and I had to share it with y’all!! When I think of Christmas I think of peppermint sticks and hot chocolate.. Well this cookie combines peppermint, hot chocolate, AND… Andes Mints!

Now I know Andes mints aren’t technically Christmas, but they go great with the peppermint extract and milk chocolate chips in this recipe.

Also, please tell me you know what an Andes mint is?! The guy at the grocery store had no clue!

This may sound crazy, but every time I bite into one I am immediately brought back to my great grandparents house. They ALWAYS had these in little dishes throughout their home. They passed away when I was so young, but every time I take a bite I am transported back to their living room.

Petey says every time he eats one he is transported to Piccadilly, eating lunch with his Pop.

Andes Mint Chocolate Chip Cookies

Makes 28-30 cookies

Ingredients

  • 1 ½ cup flour

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 10 tbsp softened butter

  • 1 cup light brown sugar

  • 1 egg

  • ½ tsp vanilla extract

  • ½ tsp peppermint extract

  • ½ cup Andes Creme De Menthe Thins chopped, plus a little extra for topping

  • ½ cup milk chocolate chips, plus a little extra for dipping with 1 tsp coconut oil (optional)

Preparation

  1. Preheat oven to 375F

  2. In a bowl whisk together flour, baking powder, baking soda, and salt- set aside

  3. With a hand mixer beat together sugar & butter until light and fluffy

  4. Add  in the egg, vanilla & peppermint extract and beat until incorporated

  5. Add in flour mixture and beat until combined

  6. Stir in the chocolate chips and Andes Creme De Menthe Thins

  7. Using a cookie scooper form your cookies and place on a lined baking sheet

  8. Bake for 10-  12 minutes

  9. Optional: Using a double boiled melt chocolate chips with coconut oil. Dip ½ cookie into chocolate and sprinkle with chopped Andes Creme De Menthe Thins
