Chili for a Crowd

Hello & Happy Saturday! Anyone watching the Saints game tomorrow?! Are you having people over?? If so I highly recommend this SUPER easy chili!

There is absolutely no measuring in this recipe- It really comes together in just around 30 minutes. Though I will say, it is better to let it simmer for a while or make a day ahead. Second day chili is better than first day chili (just like gumbo!).

Ingredients

4 lbs ground meat (I have a ton of venison in my freezer so that is what I usually use)

1 box 2 Alarm Chili Mix (I only use half of the red pepper packet, I do not use the masa)

1 jar Cajun Power Makin’ Chili starter (I find this at Albertsons or Champagnes in Lafayette)

1 large yellow onion, diced

4-5 cloves of garlic, minced

2 zucchini & 2 carrots, chopped (optional)

2 cans of whole stewed tomatoes (any variety)

1 can diced tomatoes, drained

1 can tomato sauce

1 tbsp olive oil

Instructions

  1. In a large pot add olive oil. Once hot saute onions, zucchini, carrots, and garlic until soft.

  2. Add 4 lbs ground meat to the pot and brown

  3. Add 1 jar Cajun Power Chili. Fill jar up with water and add to the pot. Stir.

  4. Add in tomato sauce + tomatoes,. Stir.

  5. Add in spices from the 2 alarm chili kit - minus masa. I add half of the red pepper packet, you do you. Stir.

  6. Cover and let simmer for at least 30 minutes. I like it better on day 2!

  7. Enjoy with Fritos or my Sweet Corn Bread
