Herb Roasted Salmon & Tomatoes

Hi y’all! Happy Tuesday, I’m sharing another delicious weeknight recipe using Red Gold Tomatoes. The quality of these tomatoes are superb! I did a side by side comparison with their competitor and you can see AND taste the difference. You can find them at Rouses, but if you aren’t local to Louisiana or the south click here to find a store near you that carries them. 

Herb Roasted Salmon and Tomatoes 

Ingredients

1 (14.5 ounce) can Red Gold® Diced Tomatoes Basil, Garlic & Oregano 14.5 oz

½ yellow onion, thinly sliced

1 garlic clove, minced

2 tablespoons red wine vinegar


Salmon

3 tablespoons extra virgin olive oil

4 salmon fillets

freshly ground black pepper

1/2 teaspoon ground cumin

2 tablespoons Fresh minced parsley

2 tablespoons chopped fresh basil

Directions

  1. Preheat oven to 425F

  2. In  bowl, toss the diced tomatoes with the onion, garlic, and vinegar 

  3. In an oven proof skillet, heat 1 tablespoon of olive oil over high heat. Season the salmon with salt and pepper then add the salmon to the skillet. Cook until well browned on the bottom, about 2 minutes. 

  4. Carefully flip the salmon then transfer the skillet to the oven and roast until the salmon is cooked through, about 5 minutes. Remove the fish from the skillet. 

  5. Place the skillet over moderate heat and add the tomato mixture along with the cumin and remaining 2 tablespoons of olive oil. Cook for 3- 5 minutes 

  6. Pour the tomato mixture over the salmon, sprinkle with parsley and basil, and enjoy!
