Instant Pot Korean Short Ribs
For Christmas this year I got an Instant Pot from my mother in law. I was surprisingly scared to break it out, but I mustered up the courage and am so happy that I did. I have only made a handful of things so far, but this is my favorite recipe to date.
For some reason short ribs seem intimidating, but I promise they were SO EASY. We picked up a little over 2 lbs (5 ribs) from the butcher counter at The Fresh Market and some cilantro and headed home to make our dinner. Crazy enough- I actually had all of the other ingredients at home. The recipe that I used was from nomnompaleo.com and I only added a couple of extra ingredients.
Prep time for this recipe takes about 5-10 minutes. Once everything is prepped you will make your sauce and add it to the pot with your seasoned short ribs. At this point, I did add a little beef broth for fear of my ribs burning and sticking to the pot. I also added a Japanese 7 Spice I had in my pantry from a dish a while back. You will cook everything in the instant pot for 45 minutes on high pressure and then allow the pressure to naturally release. The natural release only took about 20 minutes.
The finished product was amazing and yielded fall off the bone tender short ribs that paired perfectly with roasted broccoli and brussel sprouts.
