Chile Lime Chicken Bowls
It's Cinco de Mayo week!! Is that even a thing?!?!
Today for lunch I made these healthy chile lime chicken bowls. These are great for lunch, dinner, and even meal prep!
Start to finish this recipe took me about 20 minutes. I love the Seeds of Change quinoa & brown rice pictured above. It's a microwavable pouch that is ready in 90 seconds!
I also made a trip to Trader Joe's while in Baton Rouge this weekend and picked up the chile lime seasoning. LOVED it for this recipe!
I used spiralized bell peppers and onions, but if you do not have a vegetable spiralizer you can always just cut them into strips using a knife.
