Spinach & Cauliflower "ravioli"

For Today's Meatless Monday recipe I bring to you Spinach & Cauliflower "ravioli". 

The inspiration for this dish came from a stuffed pasta recipe that I saw while watching the FoodNetwork one weekend.

Now I will be honest by saying, this is not a 30 minute meal like the majority of my dishes. I suppose you could prep this over the weekend. If you do, I would cover and place in the fridge until you are ready to bake it Monday night. Oh and also, you don't have to just eat this dish on a Monday haha.

First, you will want to roast your cauliflower on a large baking sheet so that it has time to cook and then cool. This will go in a food processor to break it up. You will also use the food procesor to make the easiest marinara sauce as well.

I used a mandoline to slice the zucchini. Salted it and placed on the side to allow some water to escape. Wipe off the water and grill in a hot skillet. Using the same skillet you will also saute your spinach.

Once all of your items are prepped you will mix your roasted cauliflower, sauteed spinach, 1 egg, mozzarella and ricotta cheese together for the "ravioli" filling.

You will then stuff your zucchini with the filling and place in a baking dish that has a bottom layer of your sauce. Once all of your "raviolis" are assembled you will cover with more sauce and cheese. After this step you can either refrigerate until ready to bake or bake right away!
