Cabbage Soup

Hi! So I just returned from a bachelorette party in Nashville. SO FUN, but my body is now craving some greens.

For the past few years, whenever returning home from vacation I usually make a big pot of cabbage soup. It’s easy, delicious, and so nourishing. Just what my body wants/needs after a few days of partying.

Its a one pot meal that you can seriously do half asleep. Yup, asleep- that was me yesterday when I got home!

Side note- I don’t measure my seasonings for this. Ooops. Season as you please and feel free to use some type of Cajun Seasoning if you want, like Tony’s. If using something like that just be aware of the salt content- you may want to hold off on salt alone.

Cabbage Soup

ingredients

  • 8 cups unsalted chicken stock

  • 1.5 lbs boneless, skinless chicken thighs

  • 1 head of cabbage, roughly chopped

  • 1 head bok choy, roughly chopped

  • 1 lb carrots, skinned and sliced

  • 1 yellow bell pepper, de-seeded & sliced

  • 1 onion, sliced

  • 3 handfuls Kale

  • 5 garlic cloves, minced

  • 2 tbsp tomato paste

  • salt, pepper, cayenne pepper, granulated garlic to taste

directions

  1. Add stock, chicken, salt, pepper, cayenne, and granulated garlic to soup pot. Bring to a boil while you chop your vegetables (approx 15 minutes)

  2. Add tomato paste and garlic, stir

  3. Add all vegetables except kale (if cooking longer than an hour). Let simmer on stove stirring every now and then for at least an hour, but I prefer to cook mine low and slow for at least 4-5 hours.

  4. One hour before serving add Kale

  5. Serve alone or with zoodles & saltine crackers!

I hope you enjoy this delicious healthy soup. I used my Le Creuset Soup Crock and cannot find it anywhere online, but have also used this one. The linked pot is also great for boiling noodles.

I have done it in the instant pot, but for the life of me do not remember my settings. I will update this post next time I make it that way.
