Catfish Tacos with Pineapple Salsa

Hello & Happy Taco Tuesday. I am so excited to be working with the Catfish Institute & sharing recipes using U.S. Farm-Raised Catfish. Today, I am sharing an easy and delicious weeknight recipe! Be sure to check my Instagram Highlights for step by step videos for the recipe below!

Catfish Tacos with Pineapple Salsa

Servings 6-8 tacos

Ingredients

  • 6-8 U.S. Farm-Raised Catfish filets*, defrosted

  • 2 teaspoons cumin

  • 2 teaspoons chili powder

  • Salt and pepper, to taste

  • Canola oil

  • Tortillas

  • Sour cream & cilantro, optional

    For the Pineapple Salsa:

  • 3/4 cup diced pineapple

  • 1/4 cup diced purple onion

  • 1/4 cup diced red bell pepper

  • Juice from half a lime

  • 2 tablespoons chopped cilantro

    *Be sure to look for the U.S. Farm-Raised Catfish seal on the box when purchasing!

Directions

1. Mix salsa ingredients in a bowl and set aside.
2. Pat fish dry and cut into 1 to 2 in cubed pieces
3. Mixed together cumin and chili powder. Place fish in a bowl and season with mixture, salt and pepper. Note: we used about 3 of the 4 tablespoons. You can use more or less- you do you
4. Heat a thin layer of oil in a cast iron skillet. When oil reaches 350F begin to cook fish. Cook fish for approximately 2 to 3 minutes per side.
5. Once fish is cooked, transferred to a paper towel lined plate. Continue cooking fish in batches until all of the fish has been cooked.
6. Assemble tacos & enjoy! Don’t forget the pineapple salsa!!
