DIY King Cake

Hello! It is my favorite time of year, MARDI GRAS! Living in Lafayette, we see king cake pretty much everywhere we go. Every grocery store has their own take on this classic dessert. Then you’ve got shops like Keller’s, Meche’s, & Cajun Market. I’ve also recently discovered home bakery: Five Sugars Bakery not that far from my house.

Okay, okay I am getting to my point: King Cakes are EVERYWHERE, but sometimes it is fun to try and DIY it.

You can make this recipe as mini/individual cakes or a large single cake. My mini bundt pans are from Home Goods and I love them!

This budget friendly, semi homemade king cake is perfect for all ages. It comes together in about 30 minutes and doesn’t make that big of a mess :).


DIY King Cake

This recipe makes 1 bundt cake or 6-8 mini bundt cakes.

Ingredients

  • 2 cans of cinnamon rolls

  • 1/4-1/2 cup sweetened condensed milk

  • 2 cups powdered sugar

  • 1-2 tsp lemon juice

  • Sanding sugar- green, yellow, and purple

  • 1 cup chocolate chips (optional)

Directions

  • Preheat oven to 375F & Spray bundt pan with non stick cooking spray

  • Cut cinnamon rolls into 1/4ths , add to your pan. If using chocolate chips, add them now

  • Bake 18-24 minutes for your large bundt cake & 12-14 minutes for your minis

  • While king cake is cooling make your icing

    • Start by combining 1/4 cup condensed milk with 2 cups powdered sugar and 1 tsp lemon juice. Stir until smooth- if too thick add more condensed milk- used closer to 1/2 cup.

  • Flip bundt pan, top with icing. Sprinkle with purple, green, and yellow sanding sugar!
