Hi! OMG WHAT A WEEK! I have so many emotions going on right now, but no need to unload them here. Over on IG and on the blog I am keeping things light, hoping to spread positivity and inspire you in the kitchen and around the house.

Here is a little recap of what we did this week:

Let’s start with what we cooked:

  • Instant Pot White Beans, there is a video tutorial on IG Highlights filed under Instant Pot 2.

  • Spaghetti & Italian Sausage and then elevated the leftovers it in a casserole dish with rigatoni pasta (cooked 3 min less that the box recommendations- it will cook a little more in the oven), mozzarella pearls, and basil! SO GOOD!

  • Veggie Fried Cauliflower Rice! I just took a bag of cauliflower fried rice and added fresh carrots, sweet potatoes, broccoli, onions, and eggs for protein. Easy Peasy, 15 minute meal.

  • We enjoyed Take Out Boiled Crawfish on our patio Friday night then hopped on IG Live to make Clean out Your Pantry Cookies. DELICIOUS, find recipe here.

  • We also picked up Alesi Pizza House and ordered WAY TOO MUCH, but loved every bite we could handle. If your budget allows for eating out (even if it is just once a week) remember to choose the local guys in your area.

How did we keep ourselves entertained:

  • MOVIES! We watched Knives Out*, Instant Family*, Yesterday, and the Joker*. I recommend any with a star.

  • SHOWS! Westworld Season 3 started last Sunday & The Mandalorian

  • BOOKS! Ask Again Yes is this months book club book.. I think we are going to have a virtual book club! More to come on that later. Looking for something else to read check out the Cook Your Book Section on the blog.

  • MUSIC! James Taylor radio just calms me… and I also had a few dance parties to the Golden Girls Theme Song & Wash Your Hands by the Raging Idiots.

  • I sewed a few aprons, a hooded towel, and started working on some protective masks. LGMC posted a tutorial on their Facebook page and they have a drop off location in Lafayette.

  • YARD WORK! We spent over an hour pulling weeds in our front yard and Petey cut the grass. We are no longer a neighborhood embarrassment!

How we are clearing our minds:

  • Moving our bodies everyday for at least 30 minutes, but striving for more. Even if this is just a neighborhood walk with Chewie. Looking for ways to work out at home? Read this post.

  • Phones away during movie time- these 2 hours of watching a movie start to finish just us makes a difference.

  • Trying not to obsess over the news

  • FACE TIMING! and checking in on family and friends! It’s free and feels great to catch up.
